Whether you are a feta lover or not I dare you to try this spread. Feta unlike other soft cheeses- cottage cheese, ricotta, mascarpone etc. is not creamy but rather dry and crumbly. I remember the first time I had feta as a kid I thought it was dry and super salty.

This dip plays off of those feta characteristics in a complimentary way by adding a splash of lemon for brightness, a few teaspoons of honey for sweetness to balance the salt, yogurt for creaminess, and seasonings for additional savory flavors. It pairs great with pita bread or crackers.

The dip can be made in under 5 minutes using both fresh or dried herbs. In this recipe I used fresh parsley (~1/4 cup) and 1 tsp of dried dill along with 2 tsp garlic powder. You can certainly use fresh garlic but I recommending roasting it first( 4 small or 2 big cloves roasted should do). Pickled garlic can also be used but I would stick to 1-2 teaspoons since it can be strong. You can also use lemon juice from bottle or sun in a dressing or vinegar of choice.

This recipe makes about 1.5 cups and serves around 8. It will keep for around 3-5 days depending on if you use fresh herbs. Fresh herbs last about 3 days before color changes. Hope you enjoy this refreshing and addictively creamy dip!
Meal Serving Options: Add additional milk, lemon juice, or just water to turn this dip into a dressing. Serve over vegetables, put in wraps, mix into pasta like orzo for creamy take, or serve on top of grilled chicken or lamb for a refreshing take to any dish.
