A Dish Literally Bursting with Flavor in Every Bite

Have you ever had one of those dishes that you just go “WOW” after the first bite? Not just from the taste but from the thought that only a few simple ingredients can produce such a flavor BOMB!!! This dish is literally BURSTING with caramelized tomatoes infused with savory notes of garlic, thyme, sweet balsamic and a pinch of salt to round out the flavors. Unlike other flavorful dips like salsa and hummus they are typically served cold, involve a decent amount of chopping, and special ingredients like tahini or fresh cilantro. The beauty in this Mediterranean dish is it can be served warm or cold with zero chopping required. Also the only fresh ingredient is tomatoes! The remaining ingredients are pantry staples but of course you can substitute fresh thyme or garlic like I happened to have on hand.

Ingredients:

  • Cherry Tomatoes
  • Garlic (Used canned, dried, or fresh)
  • Balsamic Vinegar
  • Olive oil or other Neutral Oil (omit if oil free and sub water)
  • Honey, Agave, Sugar (Optional)
  • Salt
  • Pepper
  • Dried or Fresh Herbs (Italian seasoning, oregano, thyme, parsley, basil)

Feel Free to add your seasoning of choice to adopt your own flavor profile. I like to add red pepper flakes for a bit of heat. You can also add spices like smoke paprika and cumin powder to the mix.

How to Serve Roasted Tomatoes

  • Serve on top of toasted bread like bruschetta with cheese ( feta, goat, mozzarella, or ricotta) or garlic hummus
  • Mix into a creamy orzo or rice dish for a sweet bright tang
  • Put on top of a salad
  • Blend into an Italian vinaigrette for a creamy tomato infused dressing
  • Serve in a pasta salad
  • Use as a topping on hummus or a melted cheese
  • Top a pizza or flat bread
  • Put into wraps
  • Blend into a dip

There are so many options and way you can incorporate these ruby roasted tomatoes! I am still playing around with appetizers and sauce additions. I think these could make a great Italian tomato bisque if pureed with a bit of cream and additional sauteed onions. I just eat them too fast to ever have a chance for leftover soup.

Instructions

  1. Mix all the ingredients together and bake at 375F for 30 minutes. 

  1. After 30 minutes, uncover and bake for additional 10-15 minutes so juices reduce into a sauce. 

  1. You can add additional cheese at this point like feta and warm up in the oven for additional 5-10 min. Serve right away warm or let chill and have it cold.
