One of my brother’s favorites fruits is pomegranate and he was the inspiration behind this salad. Anything pomegranate related my brother raves about so why not put them on top of a salad. Pomegranates are sweet and crunchy. I think they are a great alternative for people who cannot have nuts on top[ of salads but still want some crunch. They are also packed with loads of antioxidants and add fun color to any dish. I am definitely one of those people who eat with the eyes. I love seeing variety of color in any dish. I hope you enjoy this simple recipe that can be easily customized to have other toppings like croutons, slivered almonds, crush pecans and a mix of different fruit like apples or blueberries. I personally choose whatever is in season. You can also mix up the dressing. Sweet dressings are preferred for this salad but you could also do ranch or simple olive oil and vinegar.

Begin by cutting the romaine and place into serving bowl. Toppings like fruit and other vegetables tend to fall to the bottom once tosses.

Cut the fruit and veggies into bite size piece. Layer them evenly over the top of the romaine.

Whisk or put in a shake bottle to mix the dressing ingredients together. I prefer to leave the dressing separate from the salad until serving so it reduces sogginess.
