An ice Cream so delicious you will forget its frozen fruit

I remember when I was first discovered banana ice cream. The two ingredient dessert or one ingredient dessert if you had a yo-bananas machine turned fruit into creamy ice cream. I never thought to try it with other fruit until I ran into a peach problem or should I say peach overload.

It was during peak peach season I stocked up on peaches from the farmers market in hopes to make a pie or cobbler. Sadly, life happens and I ran out of time to make the pie as they were at peak ripeness. As a means to not waste I frozen the peaches and tried making smoothies with them. However, I was running out of milk time smoothie making came along and the thought occurred to me to turn it into ice cream. Similar in texture like bananas, peaches offer that creamy texture and are plenty sweet.

If your peaches are not as sweet feel free to add honey, agave, maple syrup, or additional fruit to mix in or top. I have some suggestions below. My favorites are vanilla bean paste with a bit of orange juice or zest for creamsicle vibe or granola and honey for peach cobbler vibe.

Flavor enhancers: cinnamon, vanilla bean powder or paste, pumpkin pie spice, ginger, lemon juice, orange juice

Crunch toppings: granola, chopped nuts, graham crackers

Omega-3 add ins: flaxseed, chia seeds, hemp seeds, walnuts

You can also add additional milk or yogurt to turn it into a peach smoothie bowl. Note the yellow peaches result in orange color while white result in pink color smoothie or ice cream.

Instructions

  1. For easy blending add the milk and sweetener of choice to blender first before adding the frozen fruit.

  2. Blend for a minute and scrap downside again and blender for another 30 seconds.
  3. Top with additional fruit, chopped nuts, dollop of cream, drizzle of syrup.

Note

Let your fruit sit out for 10-15 minutes to make it easier for blending. I used a vitamix but feel free to use a food processor or blender. Just know you may need to stop and scrape the bowl a few times. If you add too much liquid don't worry you will still have a delicious dessert that is more smoothie than ice cream.
