Chocolate chip cookies always hold a special memory in my heart. Chocolate chip cookies were my mom’s go to recipe for any family gathering, vacation, and birthday event. I can still remember walking into the house after a long day of school to no the sweet smell of ooey gooey warm chocolate chips melting into the buttery brown sugar cookie. The sweetness balanced with a pinch of salt and dash of pure vanilla bean. Pure tastebud heaven!!!
These mini chocolate chip cookies are a slight variation from my mom’s which used crisco or softened butter. This recipe uses melted better and a dash of cornstarch to bind the batter. The beauty of this recipe is the cookies bake in under 15 minutes and no stand mixer required.

Preheat the oven to 350F. Line two cookie sheets with parchment paper (optional). Melt butter in the microwave for 20-30 seconds. While butter cools, mix the flour, cornstarch, baking soda, and salt in a bowl.

In a separate large bowl add the brown sugar, white sugar, egg(s), melted butter, and vanilla. Once combined, add the flour mixture to the wet sugar mixture until combined.

Lastly, fold in the chocolate chips and roll into 1 heaping tsp ball. Bake the cookies in the upper middle and lower middle rack for 10 minutes. They should puff up and the tops no longer wet.
