A creamy rich chocolate dessert made in under 10 minutes made with gluten and dairy free ingredients. Did I mention this chocolate mousse is not only delicious but healthy! Ranking in 10 grams of protein per serving. The protein adds to the creamy structure that normally is filled with cream and added sugar. The combination of high protein base (Greek yogurt or silken tofu), high quality dark chocolate, cocoa powder and splash of milk make the same rich creamy filling you won’t even miss the cream and added sugar. 

I remember chocolate mousse way back when I was in elementary school. My mom, a chocolate lover like myself, would sometimes buy the mousse cups at the grocery store. The sweet creamy light texture yet rich dark chocolate flavor. The mousse cups were definitely not a kids dessert and I would sneak an extra two cups whenever I got a chance.

The ingredients for the chocolate mousse are simple and can be swapped to whatever you have on hand. The core ingredients include:

Ingredients:

  • Dark chocolate 
  • Silken (Chickpea or regular) tofu or Greek Yogurt (Use a thick brand like Fage) 
  • Cocoa powder
  • Milk of choice ( I used soy)

Flavor additions can elevate your mousse to the next level and most of the ingredients you probably already have on hand. If serving to a crowd I would recommend adding 1-2tbsp of sweetner of choice to accommodate all various chocolate lovers from milk to dark chocolate lovers. My personal favorites are vanilla bean paste and cinnamon. I think they complement the chocolate flavor without overpowering the dessert. 

Additions:

  • For a sweeter mousse add 1-2 tablespoons of maple syrup, agave, honey, or sugar
  • Pinch of salt 
  • Pinch of cinnamon
  • Tsp of Vanilla bean paste/extract 
  • ¼ tsp Orange oil or zest
  • ¼ tsp Mint extract 

Decorating and flavor toppings are one of my favorite parts of assembling the mousse. I used a combination of shaved chocolate, mini chocolate chips, date syrup, and strawberries. You really can’t go wrong with mousse toppings and the classic whip cream and fresh fruit is always an excellent pairing. My personal favorite is extra chocolate syrup and crushed nuts. Instructions

  1. In a microwave, microwave the chocolate in short intervals starting with 30 seconds stir then shorten to 15-20 seconds stirring each time until chocolate is melted. An alternative is using the double boiler method. Set melted chocolate aside.
  2. In a high powered blender or food processor, blend the yogurt or tofu of choice along with the remaining ingredients (except chocolate) until smooth. Add the melted chocolate and blend until creamy. Note you may need to scrape the machine a few times as you blend the ingredients.
  3. Portion into 4 serving cups and serve plain or with your preferred toppings. Chill for 2 hours or up to 3 days.

Note

  • Note 1: Use room temperature ingredients to prevent melted chocolate from hardening after melting.
  • Note 2: I recommend using silken varieties of tofu or dense Greek yogurt like Fage.
  • Note 3: Add additional sweetener for those who are more milk chocolate fans around 1-2 tablespoons should do in place of some of the milk.
